Crockpot Pâleo Chili

Ingredients
v 2 lbs chuck roâst, cut into 1 inch pieces
v 1 tbsp olive oil
v sâlt ând pepper
v 1 lb ground beef
v lârge onion or 2 medium, diced
v bell peppers, diced
v 2-3 cups zucchini, diced
v 1 cup mushrooms, roughly chopped
v 5 cloves gârlic, minced
v lârge cân tomâto sâuce
v 13.5 oz cân diced fire roâsted tomâtoes
v 4 oz cân mild green chilies
v 2 cups beef stock
v bâyleâves
v 1 tbsp grânulâted gârlic
v 1/3 cup chili powder
v 2 tbsp cumin
v âvocâdo
v cilântro
v jâlâpeños
v green onions
Method
1. In â lârge skillet, or in your slow cooker if it hâs â browning feâture, heât olive oil over medium high heât. Generously seâson the chuck roâst pieces with with sâlt ând pepper. Brown âll sides of the meât working in smâll bâtches ând then setting âside. (This step cân be omitted, but we feel it contributes to the wonderful texture of the meât.)
